Bulacan: What can be called traditional Bulacan food?

Last week, I got invited to deliver a lecture at a Bulacan heritage food forum and cooking competition in Paombong, Bulacan. I was quite interested as to what can be considered traditional dishes of Bulacan. I was surprised to find out that there are some similarities between Pampanga and Bulacan when is comes to traditional food, particularly bringhiand the various frog dishes.

There was BatuteAdobong Palaka and Aligasin at Damuko sa TubaBringhe ng Tagumpayis like the Pampanga bringhe although this one is wrapped in banana leaf cones that make servings good for one.

Also on the table was Lumpia ng KalayaanHamon Bulakenya andAsado de Carajay, On the seafood list was Nilasing na HiponAlimango sa Misua, andAlimango ng Hagonoy which are from the coastal towns of Bulacan.

INIPIT

Literally means pressed, or the custard-filled sandwich, that has earned Bulacan a name for itself. Ingredients such as eggs, milk, sugar and butter make up the chiffon sandwich. The custard filling, which is the secret ingredient, is the clincher to the scrumptious “inipit” delicacy.

PASTILLAS
Pastillas de Leche if directly translated from Spanish means “milk tablets” or “milk pills” which basically describes this Filipino sweet delicacy. This is made from evaporated milk with some mixtures to make it like a dough. The dough will be formed into small shape and be coated with sugar.
